Joe Evans

Managing Director


Having left a career in banking, Joe returned to Whitbourne in 2011 to take over the responsibilities of managing Whitbourne Estate from his father.


As a keen traveller and foodie, it has always been an ambition of his to run a high quality restaurant and so Green Cow Kitchens was born.


In addition to the restaurant business Joe runs Whitbourne Estate

Mickey Provis

Head Chef


Mickey has been a keen cook for most of his life and after completing a psychology degree in London he decided to put his enthusiasm and talent into Green Cow Kitchens.  He views ingredient provenance and quality as fundamental basics in the process in producing stunning food.


As well as a passion for creating mouthwatering meals he also enjoys country sports such as fishing and shooting and working his two spaniels.

Pat McDonald

Food and Beverage Director


Celebrated Michelin Starred Chef Patrick started working with the team in 2016. He has had a distinguished career spanning 35 years, cooking in iconic restaurants and hotels including The Dorchester Hotel, Grosvenor House and Ettington Park.


His counsel and inspiration has enabled Green Cow to up its game when it comes to the food, but also retain the familiar friendly family atmosphere that has been part of its success to date.

Keeley Evans

Front of House Manager


Keeley is Joe's wife.  In her capacity as Front of House manager, she looks after customers and ensures that they enjoy all aspects of "the Green Cow experience".


Like her husband, Keeley is a keen foodie and loves to travel.

James Brown



Having always had a passion for food and drink, James first entered the industry while visiting Australia. During his travels he worked on organic farms and food trucks. Upon returning to Worcestershire he found Green Cow and was drawn to our ethos of great local produce.


James enjoys all aspects of food and drink, in his spare time he brews beer, makes cheese and seeks out new ingredients.

Ellie Symonds

Operations Manager


Having grown up in the countryside, Ellie loves being part of Green Cow.  She joined us right at the beginning and since then has become highly knowledgeable of the food and drink we serve.  In her spare time, she enjoys country walks with her family and two dogs.


During the shooting season, Ellie manages the service aspects of hospitality for our guests both at Green Cow, and out in the field.
